Empanadas!





It's been a while since I posted but i've FINALLY got something new to share.  I recently got my hands on a book about Argentinian cooking.  This is the first recipe I was able to try out from it, and I must say it turned out pretty good!  I hope you guys can try it out too!

Ingredients:

Dough:
4 cups flour
2 tsp baking powder
1 tsp salt
1 1/2 cup lard or 3/4 cup lard and 3/4 butter

Filling:
1/2 cup chopped onions
1 tbsp olive oil
1/2 cup water
1 pound boneless steak cut into 1/4 inch cubes or ground beef
1 tsp chili powder
3 cloves garlic, finely chopped
1/2 tsp paprika
1/4 tsp ground cumin
1/2 salt
2 hard boiled eggs, cut into small pieces
handful of green olives
1 egg beaten with 1/2 tsp water
pepper to taste

Method:

First were going to make the dough.  In a large bowl, combine the flour, baking powder and salt.  Make sure the fat you are using is room temperature, otherwise cut it into small peices and with your fingers, form a course meal.


Incorporate the lard or butter into the dough, you can add water to help moisten it up.  The dough will be stiff, but not dry.  Now roll it into a ball, wrap it with plastic wrap and place it in the fridge for 1 hour.


Now you can start making the filling.  In a pan place your onions, olive oil and water.  You can turn the stove to high heat and boil out the water.  Once it has all evaporated, add the meat and brown on all sides.  If you are using ground beef, drain out the excess fat.  Next stir in the chili, garlic, paprika, cumin, salt and pepper.  Now you can set it aside to cool.


 You should be able to start using your dough now.  Remove it from the fridge and start to roll it out until its about 1/8inch thick.  Make sure your surface has been floured to prevent sticking.  Using a bowl or other object that is about 4 or 5 inches in diameter, start cutting circles into the dough, until you've got about 16 or 17 circles.


Preheat your oven to 400F.

You can begin to fill the dough in now.  Use about 2 tbsp of meat in each one.  After you've put the meat in the center of the circle, place 2 small pieces of egg and 1-2 olives on top.


Moisten the edges of the circle with some of the beaten egg mixture to help seal it, and fold it over.


Make sure you press the two ends together very well making sure the meat mixture is in a tight pocket.  Seal the empanada by folding or twisting the dough onto itself.  If you can't get the hang of that, you can also use a fork and press the edges that way.  Either way works well.


Once your done with all the empanadas, place them on a greased cookie sheet.  Using the left over egg mixture from before, lightly brush each empanada to help brown them.


The empanadas should go into the oven for 10 minutes and then bring down the temperature to 350F and keep cooking for 30 more minutes.  Let them cool a bit and they are ready to eat!!

Buñuelos de Espinaca!


Spinach Buñuelos or Fritters. These were something that my grandmother used to make for us when we were growing up.  Unfortunately I never learned how to make them from her before she passed away.  Recently I was able to find a recipe for them on the internet that I figured I should try and see if perhaps, they would turn out like hers.  Well, they didn't quite turn out the way she would have made them but it was worth trying none the less.  I am sure there are several different ways of making these.  If you have a good one, don't forget to forward it along!

Buñuelos can generally be made with just about any type of filling, from spinach to fruit, to figs or marmalade.  The possibilities are endless really.  But for now, lets get to the recipe for these!

Ingredients:

2 bunches of fresh spinach (you can use frozen as well)
1/2 cup of flour
2 eggs, separated
2 tablespoons shredded cheese of your choice
salt
pepper
milk
oil for frying

Method:

If you are using fresh spinach, make sure to wash it thoroughly before using it.  Now you can put it into a medium sized pot filled with enough water to almost cover the spinach.  Set the water to boil.  Once the spinach is cooked remove it from the water to strain.  Cut it into small pieces as much as you can (it will be somewhat mushy so do what you can).  Set aside.




In a small bowl, add the flour, egg yolks and enough milk to make a paste.  Next add your shredded cheese, salt and pepper to taste.  In another small container, beat the left over egg whites until they are frothy and add them to your mixture.  Once everything is incorporated, add the spinach and stir in well.







Now you are ready to fry them.  Carefully heat up your oil in a frying pan and once it is hot, add about 2 tablespoons of mixture for each Buñuelo.  Brown both sides and place onto a paper towel to soak up any excess oil.

For some reason these turned into something that resembles more of a pancake then my granny's Buñuelos.  I am not sure if perhaps this recipe didn't have enough flour or what, but they still turned out ok, if not exactly what I expected.

Matambre!

Hey y'all!

This long weekend I decided to make a couple of things from my book on Latin American Cuisine! I decided I would try 'Matambre' (mata (kill) + ambre (hunger)) When I was looking at the recipe however, they kept referring to the meat used as, 'plate'. Yes, 'plate'. For the life of me I had no idea what the heck that was and couldn't seem to find anything on the internet about it, assuming it was some hard to find Uruguayan meat, but after searching high and low I figured out it was in fact beef brisket or beef flank. DUH! Oh well, the next problem was finding the brisket. I went to Safeway with no luck, apparently they sold out that day and there were several people looking for it. Maybe I wasn't the only one looking to make Matambre? Anyway, I went on down to the local Thrifty Foods instead and found a couple of cuts. They weren't exactly what I needed because of their shape, but I took them anyway.
This would probably be a good time to tell you what Matambre is. Basically, it's a thinly cut, long piece of brisket with onions, parsley, veggies of your choice and a hard boiled egg in the middle, rolled up into a little cylinder and then cut into very thin pieces. It can be eaten as a snack or alongside mashed potatoes. We would have this a lot when we would go to Uruguayan events or at birthday parties, etc.
Now, before we get on to the recipe itself, I just want to warn you guys that this recipe isn't as straight forward as it might seem and to be honest I wasn't prepared for that. This is definitely one I am gonna have to try and make again, with hopefully a better result. On to the goods!

Ingredients:
1-3Lb piece of plate (ie, beef brisket, beef shank)
1 onion
1 red pepper
3 cloves of garlic
3 carrots
3 hard boiled eggs
2 Tbsp. chopped parsley
2 Tbsp. white vinegar
4 cups milk
salt and pepper
cooking twine
And a lot of time!
*Note: you can also add any other veggies you like, apparently olives and spinach are used sometimes

Preparation:
Mix the chopped garlic with the parsley and the vinegar. Add salt and pepper and set aside. (This is the only time you will be adding salt and pepper so make it count)
*NOTE: Before I could do the following step, I had to cut the beef in half through the middle because it was too thick and not long enough to roll. You will see what I mean from the picture below. It would have been even better if I could cut it thinner, but next time I will try that.
Place the plate on cutting board with the fatty part up, cover it with the garlic, parsley and vinegar mixture and place in the fridge for marinating for 3 hours.



Remove plate from fridge. Finely chop the onion and the pepper, and spread them evenly over the plate. Do the same with the peeled and grated carrots.



Place the whole hard boiled eggs length-wise on top. Now comes a bit of a hard part. Roll the beef with all the toppings into a cylinder without everything spilling out! This is can be tricky, especially with those slippery hard boiled eggs. Now (and you may need some help with this) roll twine around the beef to keep the cylinder very tight. This is where it became complicated for me, because I HAD NO TWINE! And I didn't realize that I needed it until I had already started cooking. Instead I used some tooth picks, which worked for the most part but didn't keep things as tight as I would have liked.
Once you have everything tightly together, place your cylinder in a deep cooking pan. Pour milk over top of it and cook for one hour at 350F. Add more milk if necessary to cover it.
*NOTE: Now this recipe asks you to bake this in the oven but you could also do this in a deep pan on the burner. I may do this next time because I did not have a pan deep enough to have the milk cover the matambre. It didn't make a HUGE difference but I think it would have helped. The choice is yours really.

Now once you've cooked that up, you can remove it and place it onto something for draining. YES, draining. You will need to get creative here and find something (in my case, 2 cutting boards) you can use as a press to get all the excess liquid out of the matambre. I took one cutting board and put it under the matambre and another that I put on top. I then took a really heavy container of flour and placed it on top. You can use whatever you've got to do this. It needs to press for 2 hours.

Once it has done pressing, you can remove all the twine and start cutting it. Now if yours turned out anything like mine did, it will start to fall apart a bit. I believe this is because I didn't have twine to tie it tight enough. You want to cut it to about a half inch slices. But you can do it as thin as you'd like.
